摘要(Abstract):
茶黄素是茶多酚类物质的氧化物,在食品、医药等领域有着广阔的应用前景。但是,目前对茶黄素的研究还不够深入,缺乏系统的文献参考。综合国内外有关茶黄素的最新研究报告,对茶黄素的理化性质、形成机理、提取分离与测定以及药理活性进行了综述,为茶黄素的进一步研究开发提供参考依据。
