延边黄牛和延黄牛脂肪组织FASN基因mRNA表达水平与肉质的关系mRNA Expression Levels of FASN Gene in Various Adipose Tissues from Yanbian Yellow Cattle and Yanhuang Cattle and Its Association with Meat Quality

摘要(Abstract):
为了探讨不同品种牛不同脂肪沉积部位FASN基因mRNA表达水平与肉质的关系,采用荧光定量PCR技术检测延边黄牛和延黄牛皮下脂肪、腹部脂肪、肾周脂肪与其他器官的FASN基因mRNA表达水平。结果表明,2个牛品种的FASN基因mRNA在不同脂肪组织中表达量均高于背最长肌,而延黄牛皮下脂肪和腹部脂肪中FASN基因mRNA表达量都高于延边黄牛。通过对肺、小肠、肾脏、肝脏和心脏中FASN基因mRNA研究发现,延边黄牛和延黄牛肺中FASN基因mRNA的表达量高于其他脏器。由此可见,FASN是影响脂肪酸合成的关键酶,与肉质相关,其中皮下脂肪和腹部脂肪是脂肪酸合成的主要部位。
