摘要(Abstract):
概述了苦荞麦中黄酮类化合物的组成、合成途径以及不同萌发条件对苦荞麦(Fagopyrum tataricum)种子萌发物黄酮含量变化及其生物活性的影响;阐述了苯丙氨酸解氨酶(PAL)与黄酮合成的相关性,对进一步研制开发富含黄酮的新型苦荞麦食品提供了理论依据。
