高山被孢霉产花生四烯酸育种及发酵调控研究进展Research Progress on Breeding of Mortierella Alpina to Produce Arachidonic Acid and Fermentation Regulation

摘要(Abstract):
花生四烯酸(Arachidonic acid)是ω-6系列的长链多不饱和脂肪酸,对人体心血管系统、免疫系统及神经发育等有多重调节作用。近年来,随着花生四烯酸在食品、化妆品和医药等领域的广泛应用及研究的不断深入,以高山被孢霉发酵法产花生四烯酸在育种和发酵调控等方面取得了较大进展。对国内外在该领域的研究进展进行了综述,并对其研究前景进行了展望。
